Because that's who the story was about, mostly. Toph was telling some random girls during The Headband a totally made up story about her and Aang, and afterward realized she felt bad that he hand't asked her to dance. So she brought up the question later, and he said they'd make up an earthbending form and call it "The Floor Dance". 83 It's a lovely story.
